The Polish Krakauer is an increasingly popular slightly smoky, cured pork sausage. Its coarser meat is seasoned with mustard seeds, spices and a fine note of garlic creating a delicious savoury flavour. Being grilled, pan-fried, or poached this sausage works well on a bun with Bautz'ner Senf (East German Mustard), curry-ketchup sauce, or serve it on a plate with Sauerkraut.
